Method

Heat the oil in a saucepan over a medium heat. Add the garlic, vegetables and beans and cook for 2–3 minutes. Add the freekeh, then stir in the cumin, cinnamon and harissa. Add the stock and bring to the boil. Reduce the heat and simmer for 15–20 minutes or according to the packet instructions until the freekeh is cooked.

Meanwhile, get the ricotta ready. Mix 3 tablespoons lemon juice and sumac powder together in a bowl. Add the red onion, then pour this mixture over the ricotta cheese and mix until the cheese is coated all over. Sprinkle with black pepper and set aside.

When the freekeh is cooked, mix in the herbs and the remaining lemon juice and lemon zest. Serve with ricotta cheese and sumac mixture.
